The seafood paella has the perfect combination of seafood and other ingredients to create an explosion of flavours while keeping the rice as the star of the dish, as it should be.
- Finely dice 1/2 of an onion, 1/2 of red bell pepper and cut open 1 clean tube of squid and cube in small squares, clean 12 jumbo shrimps, 8 fresh mussels.
- To cook the ingredients use an authentic paella pan or a large pan at least 10cm deep. first simmer the squid with oil and salt then remove and put the onions the garlic then the red bell pepper.
- after 3 minutes add tomato sauce with black pepper and salt 1/2 tbs of paprika, add the squid and 2 1/2 cups of fish broth. Add some saffron powder.
- Now gently pour the rice in the mix, after 3 minutes add the shrimps then the mussels let it simmer for 10 minutes until the broth is absorbed by the rice.
- Let it rest off the stove for 5/7 minutes with aluminium foil on top, add some parsley and some slices of lemon before serving. Enjoy!
PRO TIP: if you like too the burned rice on the bottom, raise the heat for 2/3 minutes after the rice has absorbed all the broth
